A few months ago I found a delicious sounding recipe for raw ice cream. This was probably back in July when it was scorching hot. None the less, this week after busting out my winter coat I was itching for a taste of summer again.
Sadly I couldn’t find the recipe anywhere, so I attempted to recreate it by memory. The results were pretty spectacular! The perfect blend of creamy sweetness and tasted way better then the processed junk available. Great for next summer or this Friday night!

Raw Vanilla Ice Cream
Ingredients
1 cup cashews, soaked for 30 minutes
1/2 cup raisins, soaked for 30 minutes
1/4 cup maple syrup (use agave to make this truly raw!)
1 cup non-dairy milk
1 tbsp coconut oil
1 tsp vanilla extract
pinch of salt
Directions
1. Soak cashews and raisins for 30 minutes.
2. Once soaked, placed cashews and raisins in blender with maple syrup, non-dairy milk, coconut oil, vanilla extract and salt. Blend until smooth.
3. Pour into pour and freeze overnight or 4-6 hours if you can’t wait!
4. Top with fruit and serve.
